These slate-green lentils with a light blue variegation travelled all the way from the Puy area, which lies along and on top of the Massif Central mountain range in south central France to be in our online shop. We're very proud to be able to sell them to you.
Just as Chablis must come from a clearly defined area of land in Burgundy, an Appellation d'Origine Controllée (AOC) assures the buyer that the lentils come from Puy and nowhere else. Need we say that our lentils are genuine 'Puy'.
How to use Puy Lentils
– Puy lentils have a peppery flavour so they go well with strong meat like game or salty pork.
– Salty cured meat goes spectacularly well with lentils and if you use genuine Puy lentils, you'll find that you don't need to serve potatoes or rice with the dish.
– Red Wine and Balsamic Vinegar go very well with lentils. Cook your puy lentils with a chopped shallot and add a bay leaf to the water. When they are cooked but holding their shape, drain, season and add a splash of balsamic, then eat straight from the saucepan, or if you can wait, pour them into a large bowl and tuck in. Fast food at its best.
