– Star anise can be used in curries and tagines - just add one or two to the hot sauce an hour before you finish cooking.
Star anise is a key ingredient in marinades for pork. Mix dark soy sauce, rice wine, vinegar, sugar, ginger and chilli flakes together and add a star anise pod. Marinade pork ribs or pork belly in the mixture for a few hours in the fridge, turning it every so often. Roast the pork in a medium oven until it is done, spooning the marinade over during cooking.
